Oven-Baked Split Pea Soup

2 cups split peas, rinsed well10 cups low-sodium vegetable broth (Imagine brand is ok)

2 medium parsnips, sliced or diced

1 large red bell pepper, chopped (1.5-2 cups)

4 scallions, chopped

1 teaspoon turmeric

½ teaspoon salt


  1. Put peas in a Dutch oven or large oven proof pot
  2. Add remaining ingredients, cover, and put in 350 F oven for about 2 hours or until peas are tender
  3. Alternatively, you can cook for 1 hour on top of the stove, stirring occasionally.
